Tapping is how you don't get hurt and you don't die, especially in the training room. If you get caught or if you're not getting out of a submission, you should tap. It's significantly better than the alternative. There's no pride in being choked unconscious or having a limb injured. Most of the time there's nothing of significance on the line. What benefit is it to be sore from being stupid the next day or week? I'm not saying tap to anything and everything, but unless you have a livelihood on the line, tap and tap often.
